As the founder of the online workout phenomenon, Ballet Beautiful, Mary Helen Bowersresponsible for transforming thousands of women’s bodies—from Victoria’s Secret models to working moms—with her virtual workouts and private classes. Just how goodisshe? Bowers personally coached Natalie Portman all the way to a Best Actress Oscar for her performance in ballet thriller “Black Swan.”

Her own experience as a professional ballerina is impressive: Bowers trained at the super-elite School of American Ballet before joining the New York City Ballet at age 16, where she danced for a decade. Then, she got a bachelor’s degree from Columbia University and founded Ballet Beautiful.

Even today, as a mom and successful business owner, Bowers still sticks to a strict, healthy diet and fitness plan—and she looks incredible. Ahead, we got the lowdown on this ballerina and businesswoman’s healthy routine.

For breakfast I had
Slow-cooked oats with organic walnuts and half a peach.

For lunch I had
A chopped salad with grilled shrimp, tomato, and avocado.

For dinner I had
Green summer salad with fresh whole wheat pasta in homemade tomato garlic sauce.

Today I snacked on
An organic apple, string cheese, and raw almonds.

My go-to healthy drink is
Water—always!

The one thing I would never eat is
I really dislike food with loads of salt and heavy cream.

Ballet Beautiful.

My guilty pleasure food is
Chocolate and cheese. I couldn’t live without either.

Stick as closely as possible to your routine at home. Look for healthy choices, squeeze in an abbreviated workout on the go and drink plenty of water to stay hydrated.

An entree salad. I love fresh organic greens topped with grilled chicken or fish.
