1/2 c. coconut water
1/4 c. old-fashioned oats
packed baby spinach
1/2 c. sugar snap peas, strings removed, sliced
1/4 c. shredded carrot
1 tbsp. nutritional yeast
2 tsp. chia seeds
1/4 c. unsweetened almond milk
2 tbsp. chopped almonds or walnuts
1/4 c. blueberries
In a small saucepan, bring the coconut water to a boil. Stir in the oats. Reduce the heat to medium and simmer for 3 minutes. Stir in the spinach, peas, and carrot. Simmer for 3 minutes, stirring occasionally, until the water is absorbed. Remove the saucepan from the heat and stir in the yeast and chia seeds. Turn into a bowl, add the milk, and sprinkle with the almonds. Serve with the blueberries.
